
I’ve been working on a recipe for a healthy smash cake for the Bean’s first birthday! I didn’t want there to be any added sugars, only clean simple ingredients that you most likely already have on hand. I also didn’t want to bother with adding any honey or maple syrup, the bananas and applesauce add enough sweetness. Plus if you have a baby under a year old and wanted to make a muffin version out of this, it would be safe for your baby! Watch the full video for the recipe or follow the instructions below!
Ingredients:
- 1/4 cup coconut oil
- 1 egg
- 2/3 cup applesauce
- 1.5 bananas
- 1 cup oat flour
- 1/2 tsp cinnamon
- 1 tsp baking soda
Frosting Ingredients:
- 1 13oz can coconut cream
- Splash of beet juice for color. You can also use ground freeze dried strawberries
Instructions:
- Preheat oven to 350
- Blend oats to create oat flour. In a large bowl mash bananas. Then add rest of wet ingredients and mix with a hand mixer.
- Add dry ingredients to bowl and mix until combined. Grease 3, 4 inch ramekins and evenly distribute batter.
- Bake at 350 degrees for 12-15 min. Let cool on a rack.
- To make frosting, chill coconut cream in the refrigerator for 1-2 days.
- Using just the coconut cream (reserve the coconut water at the bottom) with a hand mixer until light and fluffy. You may need to add a bit of the reserved coconut water if the frosting gets too thick.
- Then add a splash of beet juice (or whatever you want to create the color desired) to the frosting. Freeze dried strawberries ground up are another good option to achieve a pink color. Then frost your cake and serve! Watch the YouTube video for further details.
